Peanut Butter Chocolate Chip Cookies with Sea Salt

I didn’t think it got any better than peanut butter paired with chocolate. Then I tried the two PLUS sea salt! There’s something about the salt that really brings out the savory flavor of the peanut butter. The texture of these cookies changes from batch to batch on me because I use homemade peanut butter. It makes them a bit drier, but it’s totally worth it. You could add more butter if you wanted softer cookies, but I’m very happy with the way they are. In fact, I’m pondering having one or two for breakfast. If I have milk with it, it’s a breakfast food, right?

Preheat your oven to 350°F and place a silpat or parchment paper on a cookie sheet.

Cream together the butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla in a stand mixer until light and fluffy.

Combine the flour with the baking soda and baking powder – mix well.

Slowly add the flour mixture to the stand mixer until well combined. Add the chocolate chips and mix well.

Place spoonfuls of the cookie dough onto the baking sheet 2 inches apart. Place into the oven and bake for 10-12 minutes.

Remove from the oven and sprinkle with sea salt. Let cool (but not too much! mmm gooey chocolate chips!) and enjoy.

Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup plus 2 tablespoon light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup bittersweet chocolate chips
  • Sea salt to taste

Instructions

  1. Preheat the oven to 350 degrees. Line a cookie sheet with a silpat or parchment paper.
  2. Cream together the butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla in a stand mixer or with a hand mixer until light and fluffy.
  3. Combine the flour with the baking soda and baking powder - mix well. Slowly add the flour mixture to the dough mixture until well combined. Add the chocolate chips and mix well.
  4. Place spoonfuls of the cookie dough onto the baking sheet 2 inches apart. Place into the oven and bake for 10-12 minutes. Remove from the oven and sprinkle with sea salt to taste. Let cool for a few minutes then move to a wire rack to continue cooling.
