Cocoa Brownies

I call these coco brownies to differentiate them from melted chocolate brownies. I find they’re two totally different beasts, the one with melted chocolate being fudgier, and these being cakier. Interestingly enough, they’re both very chocolaty, but then again, I did use Black Onyx cocoa powder rather than standard cocoa powder. Either way, these are simple, easy brownies that I found just as delicious as the ones I pulled out the double boiler to melt chocolate for. The original recipe came from Alton Brown, though I modified it by using half butter flavored shortening, primarily because I ran out of butter. I also didn’t sift anything, though you will want to make sure the brown sugar doesn’t have any hard lumps in it.  If you have enough butter, feel free to try that version as well, I’m sure either would be delicious.

First, preheat your oven to 300°F and  butter and flour a 8 inch square brownie pan.

Next, beat the eggs in a stand mixer or with a hand mixer until fluffy and light yellow.

Mix in everything else.

Pour the batter into your prepared pan and bake for 45 minutes to an hour, until a toothpick inserted in the middle comes out clean.

Once the brownies have mostly cooled, you can turn it upside down onto a piece of parchment paper and cut it with a pizza cutter for easy, nicer looking pieces than just trying to pry them out in chunks with a spatula. Yep, mine didn’t come out perfectly anyway, but 2/3 of them looked beautiful!

Lastly, pour yourself a glass of milk and enjoy!

Ingredients
  • Soft butter, for greasing the pan
  • Flour, for dusting the buttered pan
  • 4 large eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 ounces melted butter
  • 4 ounces melted shortening
  • 11/4 cups cocoa
  • 1 tablespoon vanilla extract
  • ½ cup flour
  • ½ teaspoon kosher salt
Instructions
