Mom’s Tacos


In honor of moving my blog to it’s own fully self-hosted domain (hooray!) I’m posting another family recipe: my mother’s tacos. Slightly spicy, well seasoned, they’re fantastic. Also, please, PLEASE, do not use premade taco seasoning. It’s way too salty, and making your own is incredibly easy. I recommend using Alton Brown’s recipe.

First, start by browning a pound of ground beef, then pour off all of the excess grease.


Add some salsa, taco seasoning, and a can of spicy (or not, as you prefer) V-8.


Simmer for 15 minutes to let flavors absorb and some of the liquid boil off.


Put in tortilla shells with your choice of toppings. Today we went with shredded lettuce, guacamole, and pepperjack cheese. Add hot sauce if desired, and enjoy!

  • 1 lb . ground beef or turkey, if you want a healthier option
  • 1 cup salsa
  • 1 can spicy v-8
  • 2 tbsp or 1 package taco seasoning if you absolutely must, I recommend this mix
  • tortillas about 10
  • lettuce cheese, guacamole, onions, or other taco toppings


  1. Brown ground beef in a skillet over medium heat, breaking pieces up with a spoon, until all of the meat is cooked and no longer pink. Drain off excess fat.
  2. Add the salsa, v-8, and taco seasoning. Mix thoroughly, and bring the mixture to a simmer over medium high heat. Once at a simmer, reduce heat to low and continue to simmer for 15 minutes, or until most of the liquid has evaporated.
  3. Place in taco shells or tortillas with preferred toppings, and top with hot sauce.
