Sometimes, you just need to have a lot of chocolate on hand. Whether it’s to celebrate surviving a difficult test, helping relax after a difficult day of work, or placating raging hormones when your very survival is at risk… these cookies will do the job. Three different kinds of chocolate, almost more than you can believe will fit in a cookie… bake them today, they may save your life tomorrow.

First, sift together the dry goods in a medium bowl and then set aside.

Then melt some chocolate chips in the microwave, and stir until smooth.

Beat butter until smooth and creamy in an electric mixer, then mix in sugars.

Whisk together eggs and vanilla in a small bowl, then mix it into the sugar/butter mixture. Next add the melted chocolate and beat until combined, and then add in the dry ingredients on slow speed. Finally, fold in the chocolate chips.

Chill dough for at least 30 minutes while you preheat the oven to 350°F.

Scoop out 2 tbsp of dough and roll into a ball. Bake on a silpat or parchment paper for 10 minutes, or until the cookies just begin to set in the center.

Ingredients

  • 1 cup + 1 Tbsp all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 ounces semi-sweet chocolate chips
  • 2 eggs
  • 1 tbsp vanilla extract
  • 5 Tbsp unsalted butter softened to room temperature
  • 3/4 cup light brown sugar
  • 1/4 cup sugar
  • 1 cup dark chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Sift together flour, cocoa powder, baking powder and salt in a medium bowl. Set aside.
  2. Melt the 8 ounces of chocolate chips in the microwave until smooth.
  3. Set aside. With an electric mixer, beat the butter until smooth and creamy – about 1 minute. Beat in the sugars.
  4. In a small bowl, whisk the eggs and vanilla. Mix into the electric mixer until combined.. Add the chocolate and beat until combined. Add the dry ingredients on slow speed. Fold in the chocolate chips.
  5. Chill dough for at least 30 minutes. Preheat oven to 350°F.
  6. Scoop about 2 Tbsp of dough and roll into a ball. Bake for about 10 minutes, or until the cookies have just begun to set with the centers still appearing very soft. They will firm up as they cool.
  7. Allow cookies to cool on baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.
