Strawberry Sugar Cookies

Good morning, everyone! It’s a beautiful (ok, foggy and overcast) Friday morning and I thought that I’d give everyone a wonderful cookie recipe to try this weekend. It takes advantage of those beautiful strawberries you’ve been seeing in farmer’s markets, so make sure to try this recipe before they go out of season. The cookies are moist, chewy, and chock full of delicious strawberry flavor. They’re a perfect summer cookie, and I might even go so far as to predict they’d go fantastic with some homemade lemonade on a hot day!

Start by preheating the oven to 350°F and lining a baking sheet with parchment paper or a silpat. Gather your ingredients so they’re all easily at hand.

First, prepare the strawberry puree. Rinse them thoroughly, then remove the stem and hull with a paring knife. Put in a blender and pulse until pureed. Next, beat 1 1/2 cups of sugar and butter together until creamy, about three minutes with an electric mixer.

Next, beat in the strawberry puree and eggs.

Stir in the flour, vanilla extract, baking powder, and salt until the flour is completely mixed with the dough.

Roll the dough into walnut-sized balls, roll each ball in the remaining 1/2 cup sugar, and place 1/2 inch apart on the prepared baking sheet. Lightly press each dough ball down to slightly flatten.

Bake cookies until lightly browned, 10-15 minutes.

    Beautiful cookies, I haven’t made sugar cookies in more than 10 years!
