Turkey Brie Sandwich with Cranberry Relish


I love sandwiches, but get really tired of the same ham/turkey, cheddar, lettuce, pickle, mustard sandwiches. My girlfriend, who is a teacher, is even more sick of them, I’m sure. So earlier this week I decided to make her a treat one day for lunch, and came up with this sandwich. It’s actually quite easy, the relish just involves dicing an apple and throwing some things in a food processor. Really, I had more trouble slicing the rind off the brie! (I hate brie rind. I know some people eat it, but to me… ick.)

Start by washing then putting your cranberries in your food processor and pulsing until they’re a rough chop.


Add your diced apples and some sugar, and pulse some more. You want a rough chop, but not a puree.


Then start layering your sandwich. I like the relish on one end and the lettuce on the other.


Add in your turkey and your brie. You could experiment with meats and cheeses here. I’m sure some ham and Dubliner would work well, for example.


Close it up and you’re done!

This recipe makes far more cranberry relish than is needed for the sandwiches. Feel free to reduce by half or more.

  • 12 oz . cranberries
  • 1 apple diced
  • 1/2 cup sugar
  • 8 slices bread
  • 8 butter lettuce leaves
  • 8 slices turkey lunchmeat
  • package of brie cheese


  1. Wash cranberries, drain, and place in food processor. Pulse until roughly chopped. Add apple and sugar and pulse again until finely chopped but not pureed.
  2. Layer sandwich with cranberry relish, some butter lettuce, 2 pieces of turkey, and brie cheese.

    Oh, yum!!!! Now I totally know what I want to do with my leftover turkey this Friday! In fact, this sandwich might just be worth cooking TWO turkeys! Your girlfriend must have been soooo happy when she opened her lunchbox and found this masterpiece!

      Haha thank you! I do try to make all the teachers around my girlfriend jealous with her lunches. I think my crowning achievement was the lamb ragu lasagna I sent with her a few months back.
